Hyde Park, NY – Fifteen medical students from Albany Medical College came to Ѹ in Hyde Park, NY on April 5 and 6 for a two-day intensive healthy cooking
course. This pilot program, developed in collaboration by and Albany Medical College, was designed to teach participants how
to choose, prepare, and enjoy a variety of health-promoting foods.
“These future doctors gained an understanding of the
fundamentals of delicious, healthy meals so that they, in turn, can better
counsel and care for their patients,” says Ѹ President Dr. Tim Ryan. “They can
use their new nutritional knowledge and culinary literacy to help improve
patients’ mindful eating and lifestyle choices.”
The students took part in a three-hour interactive lecture about
the physiology of taste and the Ѹ’s ,
followed by a full-day hands-on fundamental cooking course. Among the topics
covered were healthy ingredient swaps and substitutions; macronutrients;
healthy meals on a budget; and basic skills, including knife skills, quick and
easy meals at home, and healthy methods of braising, sautéing, roasting, and grilling.
“Our students’ visit to Ѹ
armed them with a wealth of information about healthy meal planning and cooking
techniques,” says Henry Pohl, MD, vice dean for academic administration at
Albany Medical College. “These valuable tools will undoubtedly benefit our
students personally as well as while working with underserved and impoverished
populations to improve their dietary choices. We are grateful to the Ѹ for
this opportunity.”
Albany Medical College hopes to incorporate the training
into a healthy living curriculum module to benefit patients as part of the college’s
service learning program.
While on campus, the students were treated to a healthy
dinner at the Ѹ’s student dining venue, The Egg. In addition to the in-person education, the Ѹ
provided the med school students with a subscription to its educational video
series—more than 160 videos they can access to continue to hone their skills
for the real world.
Ѹ Consulting is the industry complement to the college’s
degree programs. Leveraging the expertise and diversity of the entire college
faculty, it provides training, professional development, and customized
business solutions for food manufacturers, restaurants, retail, and
non-commercial operators.
